Over the holidays, we have been looking for some creative ideas for meals and breakfasts. So why not try some new ideas? So the new idea for today is…. making muffins on a waffle maker! I know, brilliant right? (Although, once again, not my idea…I saw it on Pinterest)
I wasn’t sure how well this would work, so I thought I would try it out with muffin mix first (you know, before investing all of that time making a batch from scratch). So, you need a package of muffin mix, eggs, water and a waffle maker. I tried it out with buttermilk blueberry muffin mix.

Start by preparing muffin mix according to the directions on the package, and add a little extra water. The batter needs to be runny enough to pour into the waffle maker.

Whenever I make waffles, I use a 1/3 cup measuring cup to pour the batter into the waffle maker, it just seems to be right amount to make a full waffle, without it overflowing as it is cooking.

I set the waffle maker to medium heat. And, poured out 1/3 cup scoop into each waffle. Let it cook and….

They turned out beautifully!

Crunchy on the outside, just like the muffin tops! They were delicious with a little bit of butter and jam.

So over all, this worked really well, and I will try it again. I have thought about, and heard of using cake mix too, but I am not sure I want to be serving the kids cake for breakfast…even if it is shaped like waffles 🙂 I think next time, I will try one of my own recipes.
